The SpectraAlyzer OLIVE and SpectraAlyzer OLIVE Top Window (TW) are advanced olive oil analyzers designed for measuring the key parameters required throughout olive oil extraction and processing.
With the SpectraAlyzer OLIVE and SpectraAlyzer OLIVE TW, olives and olive products can be analyzed across the entire processing chain. Key quality parameters in whole olives, olive paste, olive oil, olive press cakes, as well as soil samples and leaves, can be determined within 45 seconds.

The SpectraAlyzer OLIVE offers simple and convenient sample presentation through a wide range of sample cups specifically designed for different product types.
For even faster sample handling, the SpectraAlyzer OLIVE TW provides a top-window design that allows all types of olive products to be easily placed directly on the instrument using suitable sample cups.
The ZEUTEC-developed NIR method of continuous reference/sample measurement (double-beam system), combining transflectance, transmittance, and reflectance measurements, ensures high sensitivity and excellent long-term drift stability.
This method delivers reliable multi-component analysis results within seconds for all olive and olive-derived products mentioned above. No manual sample conditioning or additional reagents are required. Furthermore, olives do not need to be dried or weighed prior to analysis, significantly increasing analytical speed and overall process efficiency.
Additionally, the SpectraAlyzer OLIVE supports routine laboratory work as well as in-process quality control by providing rapid, non-destructive measurements that require minimal operator training. Its robust design and intuitive software allow operators to quickly switch between different sample types while maintaining consistent analytical performance. Olive processing
Olive quality check
Moisture, oil and acidity content in delivered olives is analysed. Oil and acidity concentration is used as basis for the payment to the farmer.
Quality check before crushing
During or after crushing moisture and oil concentration is checked for mill extraction optimisation.
Centrifugation / Decanter
Residual oil (dry and fat based) and moisture concentration is analysed to optimise the decantation process and adjust the malaxation. The extraction yield is calculated.
Oil and Quality check before milling
Starch, dextrin, glucose, ash, protein
The final oil quality is controlled by determining the moisture, acidity, peroxide no, sterols and other side parameters.
